5 stalks broccoli, tender top parts only, washed and cut into small stems
1 small red onion, peeled and sliced into rings
2 slices bacon, chopped and fried*
2 tbsp. apple cider vinegar
½ tsp. salt
¼ tsp. pepper
dash of sugar
2 tbsp. semi-hard white cheese, such as Swiss, grated
- Using a steaming basket, steam broccoli until barely tender, about 5 minutes. (You can also microwave broccoli with 1 tbsp. water for 4 minutes.)
- Remove broccoli from basket or microwave, cool, and place in a salad bowl.
- Add remaining ingredients except cheese, then toss.
- Sprinkle with cheese prior to serving.
