2 large cucumbers, peeled and thinly sliced
1 tsp. salt
½ white onion, peeled and minced
¼ tsp. white pepper
2 tbsp. apple cider vinegar
1 tbsp. vegetable oil
1 tbsp. chives, chopped
2 tbsp. sour cream*
- Place cucumber into a bowl, add salt, mix, then let stand for 20 minutes.
- Drain liquid from cucumbers, squeezing out excess, and return to bowl.
- Add remaining ingredients, toss well, and keep cool until ready to serve.
