2 lb. fresh peas or 1 10-oz. package frozen tiny green peas
1 tsp. sugar
½ tsp. salt
dash of pepper
2 tbsp. minced fresh parsley
1½ c. finely shredded lettuce
¼c. butter or margarine
1 tbsp. water
- If you have fresh peas, shell just before using.
- Place all ingredients in a medium-sized saucepan and stir gently.
- Cover tightly and cook over low heat for 20 minutes or until peas are tender. (For frozen peas, cover tightly and cook over low heat for 8 minutes. Then stir with a fork to break up any remaining frozen peas. Replace cover and cook 3 to 7 minutes longer or until peas are tender.)
