Fried carp is the traditional main dish at an Austrian Christmas Eve dinner.
3- to 3½-lb. carp fillet
½ tsp. salt
½ c. flour
2 eggs, beaten
½ c. bread crumbs
7 tbsp. canola oil
1 lemon, sliced
- Wash fish and cut into 4 slices.
- Sprinkle with salt and let stand for 1 hour in the refrigerator.
- Put flour, beaten eggs, and bread crumbs into 3 separate shallow bowls or pans.
- Roll each slice of fish in flour, then eggs, then bread crumbs.
- Heat oil in frying pan. Fry slices on one side until golden brown (about 5 minutes). Then flip the slices and fry on other side until golden brown (about 5 minutes).
- Garnish with lemon slices and serve.
